CHEESY BITES
Ingredients:
1 cup cheddar cheese, grated
1 cup Mozzarella cheese, grated
½ can sliced black olives, minced
1 cup mayonnaise
6 green onions, chopped
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Combine all ingredients in a bowl. Spread mixture on cocktail bread. Bake on a cookie sheet at 350ºF. for 10-15 minutes or until cheese melts. Makes 43 appetizers.
SHRIMPIES BY JERI
Ingredients:
1 can (8 oz.) deveined shrimp (drained and chopped)
8oz. grated American cheese
1 egg
1 dash garlic salt
1 dash ceyenne pepper
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Set aside shrimp. Mix other ingredients well in mixer. Spread on cocktail bread. Broil until brown and bubbly. Makes 43 appetizers.
CUCUMBER TEA SANDWICHES
Ingredients:
1 package (8 oz.) cream cheese, softened
3 tablespoons sour cream or mayonnaise
1 pkg. (1 oz.) ranch or Italian salad dressing mix
2 cucumbers, sliced about 1/4 in. thick
1 oz. dill weed
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Combine first 3 ingredients in bowl and mix well. Spread mixture on slices of cocktail bread. Top with cucumber slices and sprinkle with dill weed. Refrigerate, then serve. Makes 43 appetizers.
MINI REUBENS
Ingredients:
1 lb. cooked corned beef, sliced
1 lb. Swiss cheese
½ lb. sauerkraut
Thousand Island dressing
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Place bread slices on cookie sheet. Spread dressing on cocktail bread, add sauerkraut, a slice of corned beef, and a ¼ slice of cheese. Bake at 350ºF. for 10 minutes. Makes 43 appetizers.
BACON CHEDDAR APPETIZERS
Ingredients:
1 lb. bacon
1 lb. shredded cheddar cheese
½ cup mayonnaise
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Fry bacon strips until crispy. Crumble fried bacon into bits. Add cheddar cheese and enough mayonnaise to moisten. Spread on cocktail bread. Put on cookie sheet. Bake at 350ºF. or until cheese has melted (approximately 10 minutes). Makes 43 appetizers.
SHRIMP or CRAB DELIGHTS
Ingredients:
1 can (8 oz.) shrimp or crabmeat
1 jar (8oz.) Old English or Merkts cheese
1 stick soft butter
½ cup mayonnaise
1 teaspoon garlic salt
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain.
Mix shrimp or crabmeat, cheese, butter, mayonnaise and garlic salt until well blended. Spread on cocktail bread. Broil until brown and bubbly. Makes 43 appetizers.
PATTY MELTS (Hanky Pankies)
Ingredients:
¾ lb. ground beef
¾ lb. mild or hot sausage
1 lb. Velveeta cheese
1 teaspoon onion salt
1 teaspoon garlic salt
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Sauté beef and sausage until browned and meat well done. Add onion and garlic salt. Melt cheese over low heat. Drain meat and add to cheese, stir until well mixed. Spread on cocktail bread and place on cookie sheet and heat in oven 10-15 minutes on 350ºF. Makes 43 appetizers.
STEAK TARTAR (German Hackepeter)
Ingredients:
2 ½ lbs. sirloin steak (virtually eliminates the chance of obtaining any disease associated with consuming raw ground beef)
½ cup onion, chopped
1 teaspoon pepper
1 teaspoon onion salt
1 teaspoon garlic salt
½ cup capers
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Chop sirloin into cubes. Place in food processor and chop/puree until meat is the consistency of ground beef. Mix with remaining ingredients; refrigerate for 2 hours. Spread mixture on cocktail bread and top with well-drained capers. Makes 43 appetizers.
MINI PIZZAS
Ingredients:
1 lb. Mozzerella cheese, grated
1 jar (8oz.) pizza sauce
4 teaspoons oregeno
½ pound toppings (sausage, pepperoni, onions, mushrooms, etc.)
1 pkg. (1 lb.) Rubschlager® cocktail bread (rye, pumpernickel, sourdough or whole grain)
Spead pizza sauce on cocktail bread. Sprinkle shredded cheese and oregeno on sauce. Add cooked sausage, pepperoni, mushrooms or onions. Bake at 350ºF. or until cheese has melted (approximately 10 minutes). Makes 43 appetizers.
